Butternut Squash with Apple
serves 4
Ingredients
- 2 C butternut squash, 1/2-in cubes, cooked
- 1 C onion, chopped
- 1 ea Granny Smith apple, 1/2-in cubes
- 2 T heavy cream
- 1/2 t cinnamon
- 1/2 t nutmeg
- 2 T maple syrup
Instructions
- Saute the onion and apple in butter until translucent. Combine with the squash and puree with the cream.
- Remove to a bowl, mix in the cinnamon, nutmeg and syrup. Season to taste.
- Plate and serve hot.
